For Pinata Animals and Pork Gravy

Today I am grateful that the mini-crisis that hit earlier this week did not snowball into a larger one the way we endured this time last year.

Today I am grateful for friends.  Last night the family and I ate over my friend M2′s and ate a wonderful meal of seasoned chicken, mashed potatoes, broccoli and cheesy bread.  The best part was not having to cook it myself, which is quite the novelty for me these days.

Today I am grateful for my usual week’s worth of food as well as the items I’ve procured for Easter dinner.  I splurged a little this week and made a couple of more expensive dishes than I usually prepare, but the family was getting really burnt out on chicken.  The highlight, for me anyway, this week will be the gravy I made with pork loin drippings, chicken broth, onions, wine and mushrooms.  Seasoned with thyme and marjoram it is finger-licking good.

Today I am grateful for being able to have both Saturday and Sunday off next week which will hopefully allow us all to enjoy a family weekend.  I will be making some of their favorite things to eat, Princess Nibbles has requested a board game be played, and I’m sure we’ll watch a movie or something as well.

Today I am also grateful for Viva Pinata.  Not only do I find this game mindless and relaxing, but its something that I, 14-year-old Miss Artistic and 9-year-old Princess Nibbles can all do together.  It is not often that I can find something that both my girls can bond over, due to their age differences and personalities, so I love that this game brings them together.
