Today I am grateful for Miss Artistic and Princess Nibbles both earning their orange belts in Tae Kwon Do on Saturday afternoon. I am especially grateful that Miss Artistic broke her board on her first try (unlike the repeated attempts that were necessary during her yellow belt testing).
Today I am grateful for the free movie passes that I earned over the past several months at my job that allowed us to go and see Coraline for free. The animation quality was amazing!! The plot was not as engaging as I was expecting, but the girls had a wonderful time and that was all that mattered.
Today I am grateful for TVP which allows me to make a thick, filling, meaty chili without the beef, saving us the the fat and the expense of chop meat. I so love how cheap TVP is!!! I use in my chili, in a meat sauce for pasta, and I’ve even used it to stretch actual chop meat in meatloaf, stuffed peppers, and similar dishes.
Today I am grateful for cold temperatures that allowed me to put the aforementioned chili and a batch of baked beans outside (and save the packing up and cleaning up) until tomorrow morning. Tomorrow will also find me making a batch of macaroni with cheese, tuna and peas, as well as egg salad and ham salad for school lunches.
Today I am grateful for falling snow. Yes it makes going to and from work a pain. Yes it causes a spike in Gamer Dude’s pain level. But we would always both choose snow over wet slushy stuff or cold winter rain. The air is crisp and the trees and ground are slowly being covered and it does my heart good to see that beauty.

Textured Vegetable Protein. I remember when that first came out in flavors–what joy! I have been a vegetarian for almost 45 years, so any innovations were a blessing. I remember when a trip to the restaurant meant ordering a grill cheese and a lettuce wedge salad!

I was vegetarian years ago, lasted about 3 years, and that was it. I use TVP more as a way to stretch my food budget and use the unflavored granules.

every time I tested for a belt in karate I broke something..A finger, a bone in my hand, a rib.I took my brown and that’s when I broke the bone in my hand…was afraid to test for my black for fear I’d REALLLY hurt myself..ha…
